Wild herb soup (with yarrow)
Wild herbs in the kitchen
Ingredients for 4 people:
750 ml vegetable stock
1 onion
1 tablespoon butter
1 handful of nettles
1 handful of dead nettles 1
handful of dandelion leaves
1/2 handful of yarrow leaves
2 tablespoons of sour cream
Salt, pepper, nutmeg

preparation
- Peel the onion, chop it finely and sauté in butter.
- Rinse and chop the herbs, add to the onion and pour the vegetable stock on top.
- Simmer for about 20 minutes, puree, thicken with sour cream and briefly bring to the boil again.
- Season the soup with salt, pepper and nutmeg and serve sprinkled with fresh herbs.
Note You can also cook the soup with other wild herbs, such as plantain and broad-leaved plantain, fragrant violets, common vine, wild garlic, daisies or ground grass.
