Pancakes, lighter with elderberry roast

Ingredients for 2 servings:

For the pancakes:

½ untreated lemon

125 g low-fat curd cheese

2 eggs

50 g sugar

½ pack vanilla sugar

70 g low-fat yoghurt

2 tablespoons whole grain semolina

1 teaspoon corn starch

1 pinch of salt

vegetable oil For the elderberry roast: 250 g elderberries

125 ml water

1 Apple

3 plums (ripe)

Juice of ½ lemon (untreated)

1 stick cinnamon

2 cloves

½ pack. Vanilla pudding powder (or corn starch)

Preparation:

  • Wash the lemon with hot water, dry it and peel it off with a fine grater. Mix the curd cheese, yolks, grated lemon peel, sugar, vanilla sugar, skimmed yoghurt, semolina and cornstarch to a smooth dough and leave to stand for about 30 minutes.
  • Preheat the pipe to 180 degrees Celsius.
  • Beat the egg whites with a pinch of salt to form a firm piece of snow and carefully fold them into the batter.
  • Brush an ovenproof dish with a little oil, spread the dough in it and bake in the oven for about 10 minutes.
  • Take the mixture out of the oven and turn it, bake the Schmarren in the oven for approx. 2 minutes. Chop the Schmarren and serve with the elderberry roaster.
  • Wash the elderberries and remove the stalk. Simmer in the water with lemon juice, cinnamon and cloves for about 20 minutes. Meanwhile, peel the apple, remove the casing and cut into cubes. Halve and core the plums. Let the apple and plums simmer for another 10 minutes.
  • Meanwhile, mix the pudding powder with a little water. Remove the elderberry roaster from the stove. Remove the cinnamon stick and cloves. Mix in the mixed pudding powder and allow to cool. Sweeten to taste.
