Tomato soup
Particularly recommended for working people!
Ingredients for 2 servings:
3 ripe, large tomatoes
½ onion
½ clove of garlic
1 teaspoon olive oil
1 bay leaf
300 ml clear vegetable soup

Preparation:
- Wash the tomatoes, scald with hot water, peel off the skin, remove the roots and cut into small cubes. Peel onion and garlic and chop finely.
- Heat the oil in a coated saucepan, roast the onion and tomatoes, add the garlic and bay leaf, pour the vegetable soup on top, season with salt, pepper and possibly sugar and cook over a low heat for about 15 minutes.
- Remove the bay leaf. Puree the soup with a hand blender and refine with fresh basil before serving.
