Minestrone
Ingredients for 2 servings:
1/2 stick leek
1 small carrot
some celery
1 teaspoon olive oil
300 ml vegetable soup
2 heaped tablespoons soup noodles
2 tomatoes
100 g canned white beans
pepper
fresh herbs

Preparation:

Clean and wash the leek, carrot and celery and cut into slices or rings.
Heat the oil and sauté the vegetables in it. Pour the vegetable soup on top and simmer with the pot closed. Add the pasta after five minutes and cook for another five minutes.
- Wash and blanch the tomatoes (cut into the fruit, scald with boiling water, leave to steep, drain, quench, peel), cut out the stalk with a sharp knife. Core and dice tomatoes, add to the soup just before the end of the cooking time.
- Strain the beans, drain and add to the soup. Season with pepper.
- Arrange on plates and serve sprinkled with herbs if necessary.
