Millet soup with broccoli and carrots
Particularly recommended for working people!
Ingredients for 2 servings:
100 g carrots
100 g broccoli
1 spring onion
1 teaspoon olive oil
50 g millet
500 ml clear vegetable soup
salt, pepper

Preparation:
- Wash and clean vegetables. Finely slice the carrots, divide the broccoli into small florets and finely chop the onion.
- Heat the oil in a non-stick saucepan, roast the onion with the millet, pour on the vegetable soup, add the carrots, bring to the boil and cook over a low heat for about ten minutes. Add the broccoli and cook for another five minutes, until the vegetables are cooked through.
- Season the soup with salt and pepper and serve sprinkled with parsley.
