Vegetable strudel with chive sauce
Ingredients for a strudel:
1 carrot
250 g cauliflower
250 g broccoli
100 ml vegetable soup
100 g low-fat cheese
250 ml low-fat yoghurt, drained
salt, pepper
2 strudel leaves
chives

Preparation:
- Clean and chop the carrot. Divide cauliflower and broccoli into small florets. Pour soup on vegetables, sauté until soft and strain.
- Grate the cheese, mix with half of the drained yogurt and mix with the vegetables. Season with salt and pepper.
- Put on the strudel sheets. Spread the vegetable mixture on the front third and roll up. Moisten with a little water and bake at 180 degrees (hot air) for about 15 to 20 minutes.
- For the chive sauce: Season the rest of the yoghurt with chopped chives, garlic, salt and pepper.
Tip Drain the yoghurt through a coffee filter.
