Broccoli casserole with lettuce
Particularly recommended for working people!
Ingredients for 2 servings:
400 g broccoli
40 g low-fat ham
2 eggs
250 g low-fat curd cheese or low-fat ricotta
salt, pepper
30 g parmesan
For the salad:
100 g green salad (e.g. head salad, lollo bionda)
vinegar
1 teaspoon olive oil
salt, pepper, fresh Herbs

Preparation:
- Wash and clean the broccoli, cut into small florets, stew in a little water for one to two minutes, drain and drain well.
- Cut the ham into fine strips and place in a coated baking dish together with the broccoli.
- Separate the eggs, beat the egg whites until stiff. Mix egg yolks with curd cheese or ricotta, season with salt and pepper, fold in the snow and spread over the broccoli and ham mixture. Sprinkle the broccoli casserole with parmesan and bake in the oven at 170 degrees for about 30 to 40 minutes.
- In the meantime, wash the lettuce, cut it into bite-sized pieces and marinate with vinegar, oil, salt, pepper and fresh herbs.
