Millet muffins

Ingredients for 6 pieces:
125 g millet
200 ml vegetable soup
100 g low-fat curd cheese
salt, pepper
100 g zucchini
2 spring onions
2 eggs
100 g grated low-fat cheese

Preparation:
- Cook the washed millet in the vegetable soup for about 15 minutes, then strain if necessary and let it cool down.
- Mix the curd cheese with the millet, season with salt and pepper.
- Wash and grate the zucchini. Dice the spring onions.
- Beat egg whites with a pinch of salt until stiff.
- Stir the egg yolks, zucchini, cheese and spring onions into the curd and millet mixture and fold in the egg whites.
- Pour the mixture into muffin tins and bake at 170 degrees for about 45 minutes.
