Ingredients for 6 pieces:

125 g millet

200 ml vegetable soup

100 g low-fat curd cheese

salt, pepper

100 g zucchini

2 spring onions

2 eggs

100 g grated low-fat cheese

Preparation:

  • Cook the washed millet in the vegetable soup for about 15 minutes, then strain if necessary and let it cool down.
  • Mix the curd cheese with the millet, season with salt and pepper.
  • Wash and grate the zucchini. Dice the spring onions.
  • Beat egg whites with a pinch of salt until stiff.
  • Stir the egg yolks, zucchini, cheese and spring onions into the curd and millet mixture and fold in the egg whites.
  • Pour the mixture into muffin tins and bake at 170 degrees for about 45 minutes.
