Black salsify pockets
Ingredients for 4 servings:
For the dough:
350 g plain flour
250 g low-fat curd cheese
140 g butter
2 eggs
a pinch of salt
For the filling :
800 g black salsify
approx. 250 ml water
Juice of an organic lemon
1 stick leek
100 g ham
Salt, pepper
1 tsp noble sweet paprika
2 tbsp chives

Preparation:
- For the dough, crumble the flour with butter and quickly knead with the curd, eggs and salt to form a smooth dough. Wrap in cling film and refrigerate for about 30 minutes.
- For the fullness, peel the salsify under water and immediately place them in cold water with lemon juice to prevent discoloration. Cut each salsify into pieces approx. Three cm long, cook in lightly salted water until firm to the bite and strain. Collect the brew.
- Clean and wash the leek, cut into rings and briefly blanch and strain in black salsify.
- Cut the ham into small cubes, mix with black salsify and leek and season with paprika, salt, pepper and chopped chives.
- Line the baking sheet with parchment paper and preheat the pipe to 180 degrees.
- Roll out the dough into a rectangle on a floured work surface, cut out squares with a side length of approx. 12 cm, brush the corners with the baked egg. Place 2 to 3 tablespoons of the vegetable mixture in the center of each square. Fold two opposite corners together over the filling and press into place. Brush the bags with beaten egg and bake in the oven for about 30 minutes until golden.
