Fennel pudding
Ingredients for 2 servings:
500 g fennel
60 g onions
20 g butter
water
2 yolks
1 level tablespoon corn starch
salt

Preparation:
- Finely chop the onions, roughly chop the fennel. Cover with butter and a little water and steam until the liquid has evaporated and puree with a hand blender while still hot. Cooling down.
- Mix the yolks with the corn starch, season with salt and stir into the fennel puree.
- Spread out molds with butter, pour in the mixture and cook in the oven at 150 degrees Celsius in a water bath.
- Fresh potatoes from this year's season go well as a side dish.
