Dandelion honey
Wild herbs in the kitchen!
Ingredients for 6 glasses:
400 g dandelion blossoms
4 organic lemons
1 l water
3 kg sugar

- Boil the flowers in water (with lemon juice) for half an hour. Strain and squeeze out firmly.
- Then add sugar and cook slowly for two hours. Pour very hot into well-cleaned glasses and close immediately. The honey only solidifies when it has cooled down!
Note for another variant: Fill the flowers with the sugar in layers in a glass and let them stand warm for four weeks. Then slowly melt everything in the saucepan, add lemon juice, strain through a fine sieve and pour into glasses while hot.
