Quinoa salad with spring onions
Ingredients for 4 servings:
250 g quinoa
5–6 spring onions
70 g almonds
70 g dried cranberries
1 organic lemon, vegetable oil, salt, pepper, sugar

Preparation:
- Put the quinoa in a colander and wash it well with hot water. Bring 500 ml of water to the boil in a saucepan, season with salt and add the quinoa. Bring to the boil and soak for about 20 minutes over low heat.
- Briefly toast the almonds in a pan without oil and set aside. Wash the spring onions, cut into fine strips, toast them in a pan with oil and let them steam briefly. Mix the quinoa, spring onions, almonds and dried cranberries together. Season to taste.
- Prepare a marinade with lemon juice, oil and a little sugar and pour over the salad.
Note You can also use leeks as an alternative to spring onions.
