Vegetable patties with yogurt dip
Ingredients for 2 servings:
100 g potatoes
50 g cauliflower
50 g broccoli
50 g carrots
50 g leek
20 g whole wheat flour
1 egg
Salt, pepper, herbs
2 tablespoons rapeseed oil
For the yogurt dip:
250 g low-fat yogurt (1%)

Preparation:
- Boil the potatoes in salted water, peel them and press them through a potato press.
- Wash vegetables. Divide cauliflower and broccoli into small florets and sauté in a little water for 1 to 2 minutes. Finely grate the carrots and cut the leek into very thin strips.
- Mix the potatoes with the vegetables, add the whole wheat flour and egg, season with salt, pepper and herbs, mix well and form four loaves.

Heat the oil in a non-stick pan and fry the patties over medium heat for about five
minutes on both sides.
- For the dip, mix the yoghurt with finely chopped chives and chopped pickles, add the mustard and lemon juice, season with salt and pepper.
Tip Vegetable patties can also be
baked in the oven on baking paper at 160 ° C for about 20 minutes. Various vegetables can be served as a side dish.
