Vegetable patties with yogurt dip

Ingredients for 2 servings:

100 g potatoes

50 g cauliflower

50 g broccoli

50 g carrots

50 g leek

20 g whole wheat flour

1 egg

Salt, pepper, herbs

2 tablespoons rapeseed oil

250 g low-fat yogurt (1%)

Preparation:

  • Boil the potatoes in salted water, peel them and press them through a potato press.
  • Wash vegetables. Divide cauliflower and broccoli into small florets and sauté in a little water for 1 to 2 minutes. Finely grate the carrots and cut the leek into very thin strips.
  • Mix the potatoes with the vegetables, add the whole wheat flour and egg, season with salt, pepper and herbs, mix well and form four loaves.

  • For the dip, mix the yoghurt with finely chopped chives and chopped pickles, add the mustard and lemon juice, season with salt and pepper.
