Endive omelette with goat cream cheese
Ingredients for 2 servings:
2 eggs
60 g non-slip flour
75 ml milk a
little salt
120 g endive leaves
6 g butter
100 g goat cream cheese
young endive or frisée leaves for garnish

Preparation:
- Separate the eggs, mix the flour, milk, egg yolk and salt together well. Beat the egg white into snow and fold into the dough.
- Cut the endive leaves into 1 cm wide strips, scald in boiling water, rinse in cold water, squeeze out well. Heat the butter in an omelette pan until it foams up, sweat the endive strips briefly in it, pour the omelette batter over them, cover and bake for about five minutes, turn over and cook for another two minutes.
- Arrange the omelettes on plates, cut the fresh goat cheese into slices and cover with them. Serve the omelettes garnished with young endive or frisée leaves. Black bread goes well with it.
