Wholegrain strawberry roulade
Particularly recommended for working people!
Ingredients for 10 pieces:
4 eggs
salt
100 g sugar
100 g wholemeal spelled flour
30 g cocoa powder
For the strawberry cream:
500 g low-fat curd
80 g sugar
100 g low-fat yogurt (1%)
200 g strawberries
juice of 1/2 lemon
1 tbsp agar agar (vegetable Gelling agent)

Preparation:
- Separate eggs. Beat the egg whites with a pinch of salt and gradually add the egg yolks and sugar. Carefully fold in the flour and cocoa. Spread the mixture about one cm high on a baking sheet lined with baking paper and bake in the oven at 175 degrees for ten minutes.
- Turn the baked dough out onto fresh baking paper, peel off the old paper and roll it into a roulade, then leave to cool.
- Mix the curd cheese with the sugar until frothy and fold in the yogurt. Puree half of the strawberries and heat them with lemon juice in a saucepan. Stir in agar agar, cook briefly and stir into the curd mixture. Cut the remaining strawberries into small pieces.
- Roll up the sponge cake again, spread the cream on top and cover with the strawberry pieces. Carefully roll up the roulade and cool for about an hour.
