Preparation:

  • Wash the rhubarb and cut into two cm long pieces.
  • Mix the egg yolks with the sugar until foamy, add the egg whites and continue stirring on the lowest level until the dough is thick.
  • Then fold in the flour and finally mix in the hot, melted butter.
  • Place the dough in a round cake tin prepared with fat and flour and cover with the rhubarb, press the pieces of rhubarb into the dough with a fork.
