Apricot curd strudel
Ingredients for 6 servings:
1 untreated lemon
250 g low-fat curd cheese
1 egg yolk
tablespoon vanilla pudding powder ½ pack. Vanilla sugar
2 egg whites
50 g sugar
250 g apricots

Preparation:

Wash the lemon with hot water, dry it and grate some of the peel with a fine grater.
Mix the curd cheese, egg yolk and custard powder well with the mixer, add lemon juice, lemon zest and vanilla sugar.
- Beat the egg white lightly, sprinkle with sugar and beat together to form a firm snow.
- Fold the egg whites under the curd mixture.
- Cut the apricots into small pieces and add.
- Cover the strudel sheets with the filling, roll up, brush with a little water and place on a baking sheet with baking paper. Bake in the oven at 175 degrees (hot air) for about 20 minutes.
