Carrot and Pumpkin Seed Cake
Ingredients for 12 pieces:
3 egg yolks
200 g carrots, grated
150 g honey
100 g walnuts, grated
100 g pumpkin seeds, grated
1 tablespoon lemon juice
1 tablespoon whole grain crumbs
1 pinch of cinnamon
4 egg whites

Preparation:
- Preheat the oven to 180 degrees.
- Beat egg yolks with honey until frothy. Mix in the grated carrots, grated walnuts, grated pumpkin seeds, lemon juice, whole grain crumbs and cinnamon.
- Beat the egg white into firm snow and fold in carefully.
- Pour the mixture into a coated or silicone box form and bake in the oven at 180 degrees for about 50 minutes.
