Pumpkin gnocchi on spinach sauce
Ingredients for 2 servings:
300 g pumpkin
5 g butter
1 egg
100 g whole wheat semolina
40 g parmesan, grated
salt
Spinach sauce:
100 g spinach, strained
20 g onions a
little butter
200 ml vegetable stock
25 ml cream
salt, garlic

Preparation:
- Cut the pumpkin into 1 cm cubes and sauté in butter until soft. Strain with a hand blender, add salt and mix with eggs, whole wheat semolina and parmesan to a firm dough. Form a roll of approx. 3 cm, cut off pieces approx. 2 cm wide.
- Bring the salted water to the boil and let the gnocchi simmer for about 8 minutes.

Finely chop the onions, sauté in butter and deglaze with the vegetable stock, bring to the boil. Add the cream and reduce until creamy. Finally add the spinach and season to taste.
As an alternative to the spinach sauce, a mushroom and herb sauce also goes well with the pumpkin gnocchi.
