Stuffed beets
Ingredients for 2 servings:
2 beets, approx. 150 g each
60 g white bread, stale
garlic
1 teaspoon chopped herbs
50 g cream cheese
30 g Ziegenberg cheese (2 slices)
6 g olive oil

Preparation:
- Boil the beets in salted water until soft, peel, cut in half and hollow out.
- Dice white bread, toast in oil, add crushed garlic and fry briefly. Mix the bread cubes, herbs and cream cheese, season and pour into the beet halves. Top with slices of goat cheese.
- Baked in the oven at 200 degrees Celsius for about 25 minutes.
- Stuffed beets can be served as a starter, as a vegetarian main course (two per person) or as an accompaniment to beef and pork. A potato gratin is perfect as a side dish.
