Fried asparagus with vinaigrette
Particularly recommended for working people!
Ingredients for 2 servings:
500 g asparagus
1 teaspoon olive oil
4 medium-sized potatoes
Parsley (chopped)
Vinaigrette:
3 spring onions
2 tomatoes
½ red
paprika ½ green paprika
balsamic vinegar
1 teaspoon olive oil
salt, pepper

Preparation:

Wash and clean the asparagus. Heat the oil in a non-stick pan and fry the asparagus.
Peel and finely chop the onions. Wash and clean the remaining vegetables.
- Scald tomatoes briefly with hot water, peel off the skin and cut into very small cubes. Finely chop the peppers, mix with tomatoes and onions and marinate with vinegar, oil, salt, pepper and herbs.
- Boil the potatoes in salted water, strain, peel, quarter, mix with parsley and arrange on plates together with the asparagus and the vinaigrette.
