Sliced turkey with rice
Ingredients for 2 servings:
2 turkey breast fillets (125 g each)
½ small onion
1 teaspoon rapeseed oil
50 ml clear vegetable soup
3 tablespoons low-fat yogurt (1%)
6 fresh basil leaves
Salt, pepper
140 g basmati rice
For the salad:
200 g cucumbers
½ green tomatoes Paprika
2 tbsp balsamic vinegar
1 tbsp rapeseed oil
1 tbsp low-fat yogurt (1%)
1 tbsp chopped parsley

Preparation:
- Cut turkey breast fillets into small pieces. Peel and chop the onion and roast in oil in a non-stick pan. Add meat, roast briefly and deglaze with vegetable soup. Stir in yogurt, add finely chopped basil leaves and season with salt and pepper.
- Prepare rice according to the instructions on the packet.
- For the salad, wash, clean and drain the vegetables. Cut the cucumber, tomatoes and peppers into cubes and marinate with vinegar, oil and yoghurt. Season with salt and pepper and sprinkle with parsley.
