Eggplant rolls with chicken fillet and raisins

Ingredients for 2 servings:

approx. 350 g aubergine

80 g chicken fillet

80 g shallots

coriander green

30 g raisins

6 g rapeseed oil

turmeric (turmeric)

Preparation:

  • Cut the aubergines lengthways into slices (max. ½ cm thick), cut the remaining aubergines into small cubes.
  • Finely chop the shallots. Cut the chicken fillet into wafer-thin long leaves (as for carpaccio). Fry the aubergine slices dry on both sides in a hot pan.
  • Roast the diced aubergines with rapeseed oil, add the chopped shallots and raisins and cook.
  • Fold in the chopped coriander leaves, season with turmeric and salt. Cool the mass.
  • Cover the eggplant slices with chicken fillet, add a little filling and roll up tightly. Layer in an oiled pan and slide into the 180 degree Celsius oven. Let cook for about 15 minutes.
