Stuffed onions in two ways
Ingredients for 2 servings:
2 white onions, approx. 100 g each
2 red onions, approx. 100 g each
100 ml soup
100 g minced meat
20 g pine nuts
salt, pepper, oregano, thyme, lovage
100 g potatoes
30 g blue cheese
1 egg yolk
sage, salt, nutmeg, a little honey

- Hollow out white onions. Mix the minced meat with the soaked bread roll, finely chopped and roasted onions (use part of the hollowed out onion mixture), pine nuts and the spices and pour into the onions.
- For the filling, press the boiled potatoes, mix in the blue cheese, yolks, spices and a little honey and pour into the hollowed out red onions.
- Put the onions in an ovenproof dish, add the soup and cook in the oven at 180 degrees Celsius for about half an hour.
- The hollowed out onion mass can be finely chopped and used for sauces, soups or vegetable dishes.
