Spaghetti with salmon and arugula

180 g whole wheat spaghetti (raw)

100 g smoked salmon

2 spring onions

1 teaspoon olive oil a

Preparation:

  • Cook and strain the pasta according to the instructions on the packet.
  • Cut the smoked salmon into small pieces and the onions into fine rings.
  • Heat the oil in a non-stick pan, fry the onions lightly and deglaze with lime juice. Remove the pan from the hot plate and add first smoked salmon, then rocket and mix with the pasta.
  • Roast the pine nuts in a hot, non-oiled pan. Arrange the spaghetti on plates and sprinkle with pine nuts.
