Salmon fillet with vegetable noodles
Particularly recommended for pregnant / breastfeeding women
Ingredients for 2 servings:
120 g ribbon noodles
1 spring onion
300 g carrots
100 g mushrooms
300 g broccoli
1 tablespoon olive oil
100 ml clear vegetable soup
Salt, pepper
250 g salmon fillet

Preparation:
- Cook and strain the pasta according to the instructions on the packet.
- Peel onions and cut them into fine pieces. Wash and clean vegetables. Cut the carrots into thin strips and the mushrooms into thin slices. Cut the broccoli into small florets.
- Sauté onions and carrots in 1 teaspoon oil in a non-stick pan, deglaze with vegetable soup and let simmer. Add the remaining vegetables after about 3–4 minutes, let them cook and season with salt and pepper.
- Divide the salmon fillet into two pieces, drizzle with lemon juice and fry in 1 teaspoon oil on both sides, then add a little water and cook for about ten minutes.
- Mix the pasta with the vegetables, serve with the salmon and garnish with fresh herbs.
