Salmon on tomato with a herb crust
Ingredients for 2 servings:
350 g tomatoes, salt, pepper
1/2 bunch of flat leaf parsley
1/2 bunch of basil
300 g salmon

Preparation:
- Wash the tomatoes, blanch them if necessary (cut into the fruit, scald with boiling water, leave to steep, drain, quench, peel) and cut into thick slices.
- Spread the tomato slices in a coated baking dish, season with salt and pepper and cook in the preheated oven at 180 degrees (hot air) on the middle rack for about ten minutes.
- Wash the herbs, cut into small pieces and season with salt and pepper.
- Rinse the salmon, dry with kitchen paper, then cut into pieces and place on the tomato slices.
- Spread the herb mixture on the fish and bake in the oven for another 15 minutes.
