Ratatouille
Ingredients for 2 servings:
80 g onions
approx. 160 g zucchini
120 g aubergine
200 g tomatoes
approx. 100 g yellow paprika
1 clove of garlic
fresh herbs (oregano, thyme, …)
salt, pepper

Preparation:

Wash vegetables and dice separately. Finely chop the onions and sauté in oil.
Add the zucchini, aubergines and paprika.
- Stew for five minutes, then add the tomatoes, season with garlic, salt and pepper and stew for another five to ten minutes.
- Add the fresh herbs before serving.
