Rhubarb and strawberry dessert

Ingredients for 4 servings:

300 g rhubarb

100 ml apple juice

1 pinch of cinnamon

60 g honey

125 g curd cheese ≤ 10%

250 ml yoghurt 1.5%

500 g strawberries

250 g ladyfingers

1 teaspoon chopped sunflower seeds

Preparation:

  • Cut rhubarb into 1 cm long pieces and sauté in apple juice and cinnamon until soft. Stir in 40 g honey and allow to cool.
  • Mix the curd cheese and yoghurt and the remaining honey until smooth
  • Quarter 400 g strawberries and fold into the rhubarb compote
  • Halve the ladyfingers and use half to line a flat bowl. Put half of the rhubarb and strawberry compote and half of the cream on top. In this order, form another layer and refrigerate for an hour.
  • Before serving, cut open the remaining strawberries in a fan shape. Garnish dessert with strawberries and sunflower seeds.
